The Bakery lies in Soil Street, Xewkija and is run by two brothers, Pawlu and Indrija , who come from a family of village bakers. The particular bakery has been operating since 1960. It has two ovens that are heated by two powerful blowers. The oven outlets are made from cast iron cast at a foundry in Malta. It is very similar to the majority of ovens of the same period around the Maltese Islands and bears the Maltese Cross on the top part of each outlet. The baking temperature is raised to 500 degrees Celsius, and it takes around 1&1/4hours to bake bread. |

Apart from traditional bread, the bakery provides Qaghaq (sesame rings), Galletti (water biscuits), fancy bread rolls and Panini (buns) The latter are marked with a particular recognition cross. The bakers also carve names and titles on particular bread rolls. Names of popular football clubs are a common sight on these rolls.The normal working day starts at early dawn while the first bake is drawn in at around 7.30a.m. The dough is mixed by machinery and then left to set in special long wooden receptacles called Mejjilli . Both Pawlu and Indrija are remarkably clever in their trade, and both handle the dough with notable speed and skill. In no time, the dough is portioned, weighed, shaped and prepared for baking. The MARIBLU RESTAURANT specialises in local dishes including fresh fish, as well as continental cuisine. Maria, who is also the cook, specialises in traditional cooking and many of her old recipes, are famous with our regular customers. Such dishes like, Widow's Soup, Stuffed Marrow and Aubergen, Braggioli, Torta tal-Gbejniet (sheep's cheese pies), Kosksu, Aljotta (fresh fish We serve buffet breakfast, daytime snacks, lunch, and dinner. Dinner consists of a three course meal but one can also choose from the A La Carte menu. All food is served either in our air-conditioned restaurant or by the pool. During the summer months, we organize barbecues by our Pool. We also have a Pizzeria, which is very popular both with the locals as well as with the Maltese, who cross over to Gozo just for a mouthwatering pizza and then take the ferry back home. |
